Spaghetti squash has been featured here before but not in the same fashion. Tonight I roasted the spaghetti squash with a couple cloves of garlic (375 degrees for about 40 minutes) and toasted some of the seeds for about 20-30 minutes in the same oven. After removing the squash I took a fork to it, pulled out the goodness, and topped it off with a blended mix of balsamic, olive oil, the roasted garlic, fresh basil, and red pepper. Top that with a bit of parsley and asiago and voila - spaghetti squash fabulousness next to a salad with the spaghetti squash seeds along side a virgin grape juice cocktail (it's like wine for babies).
