Shanxi Buckwheat Noodle

This is a late post but better late than never. This is one of the traditional noodles we had in Datong, Shanxi where they say they have 200 plus varieties of noodles. Not sure how they make this but the honeycomb shape is definitely unique and all are connected. It is first steamed and then stir-fried but otherwise steamed is ok. There is a bowl of spicy meat sauce on the side. This one is meant for sharing, put a few pieces in your bowl then add the sauce and enjoy! Happy eating! =)
