Day 320 - Banana chocolate chip muffins for Family Day

Today is Family Day in many parts of Canada. It is supposed to be a day set aside for families to spend time together.

Today Laci and I made banana chocolate chip muffins, a favourite staple baked good in our house. Mostly because they are so easy to make, and of course, because they have chocolate in them.

Ok, so I've had several requests for the recipe, and now I know the rules… food posts must have an ingredients list lol

Banana Chocolate Chip Muffins

makes 24

Preheat oven to 375F (190C)
grease 2 muffin pans, or line with paper liners.

4 cups all purpose flour
1 cup white sugar
4 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 cup chocolate chips
2 large over ripe bananas
1 cup milk
2/3 cup vegetable oil
2 large eggs

In a large bowl, combine all dry ingredients, including chocolate chips. In another bowl, mash bananas and add remaining wet ingredients, mixing to combine.

Add wet ingredients to dry ingredients. Mix until just combined. Do not over mix. Spoon evenly into muffin pans, filling approximately 2/3 full.

Place in middle rack of oven and bake for 15 minutes, rotating after 10 minutes. Cool a few minutes before removing from pan. Enjoy hot, even better with a bit of butter! Any leftovers, store in an airtight container.
