Fortune Cookie Day....

November 16.
So, I went to bed at 4am today, and got up at 10 because I still had a ton to do…which included running some more errands…

Okay, so today I had to finish the fortune cookie boxes, finish all the fortunes to put in the fortune cookies, and make the cookies themselves….50 of them…

AND you can only make like 3 or 4 at a time because they harden quickly…so you don't even want to know how long I was at the stove and how many batches I had to whip up during the day…..I'll spare you the gruesome details…haha!

So, on top of that, I still had to add music to the slideshow, which I thought would only take me an hour. So, I started around 11pm, and I didn't get to bed until 3:30, and I had to get up at 5:30 to meet at the restaurant by 7…..GRR…another LONG night!

Just ask Cassie, I was about at my witts end! HAHA

2 egg whites, beaten…

Add 1/2 tsp of vanilla
1/2 tsp of almond
3tb of vege oil

whip

In a seperate bowl…
8 tb of flour
8 tb sugar
1 1/2 tsp cornstarch
1/4 tsp salt

to that mixture add 3 tsp of water…it will be lumpy like this…

Add the dry mix to the wet mix, whip..

put small circles on a baking sheet…You can only do a few at a time because they harden pretty quick

bake 15 min at 300 degrees….they turn out like this…

put your fortune in now…

wear gloves…these puppies are hot….then fold in half…

Then fold over a cup like this to get the shape

Then I put mine in a muffin tin to cool, but you can put them in the bottom of a cup too…

I had to make 50 of these bad boys!

      Hmm... it sounds like a lot of work. Not sure if I'm really up to making those myself now. Might be a good Valentine's Day idea, though, with some naughty fortunes. Ha!
