  • 1/2 pound macaroni
  • 1 tablespoon olive oil ( I just used the fat from the hamburger)
  • 1 onion (chopped)
  • 1 green pepper (chopped)
  • 2 pounds lean ground beef
  • 1 tablespoon cumin
  • 2 tablespoons yellow cornmeal
  • 15 ounces diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup buttermilk (or low-fat Greek yogurt)
  • 1/4 cup chopped parsley
  • salt
  • pepper
  • 1/2 cup Monterrey Jack and 1/2 Cup Sharp White Cheddar ( I cubed instead of shredding )

This is another one of those I want something slightly different meals . This was a great starting point for a dish in the future. There are some changes I will make in the future. I think 1/2 lb of Mexican Chorizo and 1/2 lb of hamburger or diced chicken. Also I would and am considering adding a Pablano Pepper to the dish also. Maybe a 1/4 to 1/2 teaspoon of chili flakes as it needs something to cut through the richness outside of an acid like the buttermilk.

I agree with Jay you should start a video blog as well, that doesn't mean you give up on us folks here. 
Interesting enough ( maybe it's not interesting but what came to my mind ;0 ) I had at a dinner in Hanniabal Mo, what they called cheeseburger omelette ( your first photo reminded me of it) it's made with all the ingredients you would find in a cheeseburger stuffed in an omelette. Very very tasty. Second thing that came to mind when reading the recipe was last night's dinner was homemade mac and cheese with Chorizon.  If you haven't tried Paula Dean's mac and cheese I would strongly recommend    https://www.foodnetwork.com/recipes/paula-deen/creamy-macaroni-and-cheese-recipe-1947457 . We didn't use the crockpot and made some changes of our own such as adding cut up chorizo to the mix before baking.  Creamy and cheesy :)
