Granola and Parfait .... For Fall Cool Weather

Granola is a bit of a fall luxury for me and making it well it is simple but hard (for me) at the same time. It has taken me a dozen batches to get the end result close to what I want. This one was the closest I have gotten so far.

I decided what better way to try it than make a parfait .

It made for a nice refreshing desert . I had some left over berries so I made a raspberry/blackberry syrup to drizzle over the top for an extra hit of yumm. I am wishing the mint I have starting to root was going well and I would have added a sprig for a bit of green.
We have finally had a bit of cool weather here and it is quite refreshing . High in the mid 70s (f) I have missed this . Now for it to drop 20 or 30 more degrees for the high temp and I would be in heaven . Hopefully Tomorrow 14 Oct. I will be headed to a pirate festival should be a great time or at minimum an interesting time.
Ingredients

  • 4 cups Oats
  • Pinch of salt
  • Tablespoon of Cinnamon
  • 1 stick of butter(melted)
  • 1/2 cup to 1 cup chopped nuts I used pecans
  • 1/2 cup to 1 cup of Dried Fruits ( I used cherries,cranberries,raisins,and dates)
  • 3/4 cup of coconut flakes.
  • 2/3 cup of Honey and 1/4 cup of Brown Sugar,
  • 2 teaspoons Vanilla

Preheat oven to 300F. Mix everything in a bowl then spread on a baking sheet . Bake for 30 min stirring every 15 min . I wanted mine to dry out just a bit more so I turned oven off when the oats started browning just a tad and let them cool as the oven cooled down. My thinking is this will allow it to keep a bit longer in the humid environment I live in .

For this type granola it is . It helps toast the oats and caramelize the sugars. It amazes me how many different ways this simple dish can be prepared .

Excellent photos and excellent granola. I love granola with a few spoonfuls of yogurt. Like a granola cereal but with yogurt.

This is closer to a granola cereal than a trail mix type granola but I agree.
