I did two of the chocolate barks yesterday . The Dark Chocolate Ginger and the Peppermint Bark. It was rainy warm and humid the unperfect conditions for chocolate . The chocolate was not tempered correctly so it did not have that beautiful glossy shine and snap but it was not tempered so badly that it was a grainy mess . So semi sucessful . Today I made the Sour Cherry and Pecan Bark . The temper is closer but still a bit wide right of the goal posts. Either way they are edible so giving my lack of knowledge of Barks I will take that success and build on it in the future maybe . Any tips or tricks for working with Chocolate I will gladly accept them . Todays Bake is Chi Tea Meringue Drops and the Panettone also the preferment for the butter dipped rolls . I still have the rolls, Whoopie Pies , Banana Nut Bread and I feel like I am forgetting something oh yea the Yule Log . The Woopie Pies and Yule Log (starting of it , The finish will be done on the 24th) .
