Day 24/365 From Frozen to Dinner ....

Charcoal steak , Chicken steak , a part of the top blade cut of beef that is the protein for dinner. My wife is not a fan of steak and it makes me sad because I love a good grilled steak from Picanha to Fillet . We get a "weekly" meal deal that lasts us two weeks . Charcoal steak is one of the items included . Sometimes I will cook them as steak and cook my wife something else but most of the time I will bend the steaks towards something she likes. A good comfort food of mine is anything from the Caribbean to Latin America this is the foods that wrap me in a warm hug . So today I will be making Quesadilla's. Time to turn the steaks into thin slices of beef for the dish . It is best to slice the meat when it is soft frozen .

I slice the meat thin as I can and across the grain so it is more "tender" . Then I take the meat slices and marinade them in a mix of Cilantro (corriander leaves ) , Salt , Pepper, Vinegar (cider is my fav) , Ancho chili powder, garlic and EVOO (extra virgin olive oil ) , and lime juice.

While this mix is hanging out getting yummy I will make the dough for some flour tortillas. I should give a word of caution. If you ever make or eat fresh flour tortillas the store bought stuff tastes less than good.
Flour, Lard (vegetable shorting works too) , Salt , Baking Powder, and Water is all that goes into them. Combine this kneed it wrap it and let it hang out in the fridge .

The most difficult thing about making these are well getting a circle out of them . I have made some abstract tortillas some even have resembled some kind of amoeba .

After rolling the tortillas out it is time to grill them or should I say cook them on a griddle or cast iron pan . One important step here is take a towel or cloth that wont leave lint on the tortillas and cover the tortillas as they come off the grill. It gives them a bit of extra cooking and softens them with the steam.

Cook the meat which has been marinating and let it cool down to close to room temp .

Since Vegetables are healthy I am going to throw some in a few of them also.

Then it is time to assemble the Quesadilla's and cook it so the cheese melts .
