Blueberry Muffins are on the to make list for this week. Great sounds delicious...... 1 MAJOR issue. Dairy forking dairy which I love and well my daughter loves Blueberry Muffins as much as I do so that is an issue. We have a recipe that we like which is found on King Arthur Flour and the results are delicious. So after a bit of searching I did not find a firm recipe that did not have either milk or butter. I got to thinking Coconut Oil (firmed up in fridge) is a listed sub for butter and almond milk is a sub for milk. Now this got me curious and I spent a few hours going down that rabbit hole only to come up empty on a firm decision so ....
The great think about KA (King Arthur) is on their website they have a Please Help so I Dont Die button and it is not just for the store. It is a help I have a question about baking button. I consulted one of their wizzard bakers and explained Dairy is an allergy but I love this recpie can I do a 1 for 1 swap of the dairy for non dairy and the person (yes a person not a bot) told me it will work... CHEEEEEEEERRRRRR.
Short day for school and a bit of work done for Mon. load and we decided to give this creation a shot.
After they have cooled down some we tasted the last one which is more a plain muffin than a blueberry muffin the inital impression is a bit dry but a good flavor. So with this in mind I would say for the next attempt we need to add a bit more almond milk maybe 2-3 tablespoons and increase the fat by one or two tablespoons. Overall not a bad result for winging a recipe.
