Coconut Pumpkin Chia Pudding . My daughter wanted to make a fruit smoothie bowl for our breakfast for dinner meal last night. Well she wanted Chia seeds as an ingredient for it . I was expecting to find a small bag (a few oz ) Yea apparently it comes in two sizes here Large and Extra Large bags. Well we decided to experiment with them just a bit and settled on a Coconut Pumpkin Chia pudding because well it was what we had 99% of the items for. The 1% we just subbed out for what we had.
Because my daughter is Lactose intolerant I have been looking for ways to cut dairy out of some of the things we make and well desserts have a lot of dairy in them. We did find a can of Coconut Evaporated Milk a few weeks ago so I subbed that for Coconut Milk . One thing I learned about Evaporated Coconut milk is the sweetness intensifies as it sits but it has an incredible flavor. Something I am going to pick up again but not to use in this recipe. I prefer it less sweet and something that my wife could eat . Even then it is a rich dessert in flavor so not much is needed to cure a craving for sweet. There will be a take two of this maybe then I will post the recipe.
