26 Feb My Name is Russ I Have a Cookbook Problem.....

This is overflow from two and a quarter other bookshelves worth of various cookbooks some range back to the 20's and 30's . I love them to me they are kind of little treasures. Some of the old ones it is fun to look back and see how things have changed especially in the preservation dept. Other books I love to find are old Church Cookbooks from the 70-90s. Outside of that if it has techniques and goes more into depth than add xyz cook for abc lenght of time then odds are it is on my wishlist.

Anywho I am attempting to start another fermentation project.

I am too cheap to buy a SCOBY that is in progress so I will try to start one from this drink. Unfortunately there is not as wide of a selection here as in Charleston but I think this brand will fit the bill. Once the tea cools down to oh 95F then I will add the contents of the bottle to this put a cloth over the jar for a few days then put a lid on it and wait and see if it takes or not. I may do a batch of Ginger Beer this week coming up I guess that will depend on weather and my sense of humor or lack there of.

I hope everyone will have a good weekend. I know here it will be a good weekend to be a duck or a frog as we have buckets of rain coming our way. So will be searching for indoor projects.

Are you making kombucha? My aunt used to brew it back in the 80s in a huge jar she kept under the piano (?). It was revolting and amazing!

You and I must have been on the same wave length....I did shoot my cookbooks as well. Will post mine. I have never done fermentation, quite honestly I didn't know what SCOBY was...had to look it up.

Easiest one to start with is Cabbage if you like Kraut and if you bake with yeast then it is a short term fermentation too.

I've tried many things in the kitchen but never fermentation - except by accident. Have you seen Brad Leone's Bon Apetit's videos on fermentation? He's just fun to watch in general.

I love his videos. He does some on Instagram that are a hoot also. Fermentation I have been expanding what I do with it. A few years ago it was only say Kraut or pickles. This spring I have a few projects to start that will be longer term ferments ie Soy and Miso.
