Todays choice for chamber of heat is the older charcoal grill that I have. I use it mostly as a smoker. This is while the grill was coming up to temp and achieving a better level of combustion so it is a clean smoke.... The wood chunks are one of my personal favorites and that is Pecan Wood the other favorite is Peach Wood but that is hard to find here in W. Tenn.
This is the meat of the day. Local store had several of them on sale for 50% off which is almost back to 2019 prices the rest of them they had lost their mind on the price of.
In about 8-10 more hours this will be a shredded mess of deliciousness destine for the stomach.
If the energy and pain levels are good later I plan on making some Andouille Sausage later if not today then I will do it later this week.
