Sunday was Deep Fryer day. I haven't used my fryer in about 3 years and finially decided to dust her off and start deep frying things in time for the championship games. Here's a list [photoblog.com] of all the recipes that I've posted. Here is my fryer setup - ready for pickles. I've got some panko crumbs, a spicy flour mix (1/3 cup flour, 1 tablespoon garlic powder, and 1/4 teaspoon cayenne pepper) and an egg yolk/milk dip (1 egg yolk, 1/3 cup milk). You dip the pickles (far right) into the yolk, then the flour, then the yolk again, then the panko crumbs. Put them in the freezer for about an hour then fry in peanut oil at 375F for about a minute or two. Here are the deep fried pickles. I first had these visiting a friend at school. His entire fraternity swore by the deep fried pickles at a local bar. I had to try them and to my amazement they were fantastic. Something about the sweetness of the pickles combined with the salty spiciness of the batter. I used a different batter to make the mushrooms. The liquid is buttermilk and an egg. The flour mixture has some cayenne, black pepper, salt, and garlic powder. You do dry, wet, dry. Here is the finished product. Fried mushrooms are a favorite treat of mine. Only one place in my neighborhood makes them and they don't do a very good job. Deep fried Oreos make for a great dessert. You basically make pancake batter (1 egg, 1 cup milk, 2 teaspoons oil, and 1 cup of store bought pancake mix) and dip the Oreos in it. I don't know why, but frying them seems to make them even sweeter tasting.
