Peach Salad with a Basil Vinergerette and Feta

Here's a great little end of summer salad I found. It's bright and refreshing with just a little bit of a bite from the vinegar. It's a surprisingly easy salad to make:

Ingredients:
1/4 cup diced basil
1/4 sherry vinegar*
1/3 cup olive oil
1 teaspoon mustard
1 diced shallot
1 tablespoon honey
1 lb cherry tomatoes
4 peaches
1/2 cup feta

Directions:
Dice the shallot and basil. Place in a blender and add the vinegar, mustard, and honey. Blend until the basil and shallot are finely minced. Slowly add the oil, while blending to emulsify it. Drizzle over diced peaches and crumble the feta on top.

* I didn't have any sherry vinegar so I substituted 1/2 red wine vinegar (for the bite) and 1/2 rice vinegar (for the sweetness)
