Daily Reflection

Net carbs for today came in at 26.5 and total carbs were 42.  Skipping breakfast helped a lot, as did having a lot of high-fiber foods.

Today was my mom's last day with me so we went downtown to show my grandma where I work and downtown in general.  We stopped at Chick-fil-A on the way back and mom and I each got salads.  Mine came in at 7 net carbs, more total, but I'm pretty sure it was even less than that.  I requested no corn and did not add the topping that came with it.  I only ate one grape tomato and there were some carrot shavings.  The dressing had 3 carbs and I greatly reduced the carb total by subbing the breaded chicken with grilled.

When we got home, I had a slice of the peanut butter pie.  It didn't really set up all the way but is still really yummy.

After taking my mom to the airport, I pulled out the Thanksgiving leftovers.  I used the rolls to make ham and turkey sandwiches, which were really good and I'll be doing again.  I also had servings of the two most remaining sides, the mashed cauliflower and the stuffing.

After dinner I had another serving of the peanut butter pie, yum.

All in all, not a bad day.  I've already packaged most of the leftovers into little lunch servings to take to work this week (the two days I'll go in) so we mostly only have meat left in large quantities.

Tomorrow I take my grandma to my aunt and then I have my homework to get done so I'm not sure how the day's food will look although I expect there will be more leftovers at some point.
