Cloves are flower buds harvested and dried in shade. Once the flowers bloom the spiciness of the clove is lost to a great extent.
The stalks on which the buds occur are also flavorful.

Cardamom, Nutmeg And Mace
Cardamom - Mature fruits are harvested, dried in shade. These are green cardamom.
Mace and Nutmeg - Nutmeg is a stone enclosed with a red Aril which is fragrant this spice is Mace. Once the fruit opens it reveals the red aril.

Pepper corns!!!
Red ones are the ripe ones which become white pepper corns.
Green ones are mature fruit which become black pepper corns.
