Red chillies

North central districts of Karnataka has a wonderful spice to boast about.
Byadgi chillies
Byadgi is a town in Haveri district from which this chilly gets its name.
Not too hot, but mild, it imparts a wonderful colour to the food. A rich red.
The crop is now being exlusively cultivated for the dyeing industry. The red coulour pigment “oleoresin” is extracted for commercial requirements.
Quite a journey for the Byadgi chilli - firstly an introduced species to the country then a loved spice now a source of colour.

These pictures were taken a couple of years ago. It was harvest time late winter.

Arranged mounds of chillies after they have been dried.

Far behind is a sunflower field. An empty stretch, Chillies drying in the sun. A field of millets.

The chillies piled are covered in the evenings to avoid the dew to set upon it after sun down.
