All set to get pickled

When we talk about pickles made from fruit, root and vegetables we have three seasons - summer early monsoons and the winter.
Flavours are completely different and the processing too. Most indian pickles are prepared in oil, salt and spices.
Some others are brine based.
Along with pickles there is a large variety of savoury preserves - called Tokku, and chutney.

I liked all the contrasts here

All seasons have gotten a little berserk……. we find mangoes almost all through the year now (at 2 o'clock position)
as a child we saw mangoes only during summer months from march onwards.

She has wood apple too Aegle marmelos
we make savoury spreads and flavoured rice
a summer drink from ripe ones
raw ones are sour astringent ripe ones are sweet sour and astringent.

Makali beru
Swallow root
Botanically Declaepis hamiltonii - listed in the IUCN endangered list, It is sought after for its blood purifying properties.

Here there is - we'll go clock wise, menasu fresh green peppers in the small sack, betta nellikai fresh Indian gooseberry, Makali beru - swallow root, mavina sunti mango ginger, arishina fresh turmeric and raw tamarind or hunsekai
local names are all in Kannada

Pickles are made from these brine and red chilly powder are the base. Not oil unlike most traditional Indian pickles.
Most of these vegetables here are considered warm to hot in nature, exception is the Indian gooseberry. These are pickled in winter and consumed in winter only; In some households it is simply too strict not to consume these in any other season.
All have medicinal properties and are used in various house hold remedies.
