A New Years Breakfast

Bacon wrapped eggs is my new favorite dish. In fact, I love making these for my Mum and myself as a treat. Simple, elegant, and guaranteed to impress just about anyone.
Check out the recipe below:

Using a muffin tin for 6 (greased)
Using a baking sheet with a lip (greased)

Heat oven to 400'
Par-cook bacon on baking sheet, laying flat
When cooked halfway to liking, remove from pan and (if you desire) dab grease

In a muffin tin for 6, spray with Pam or non-stick margarine
Heat the non-stick pan (already sprayed), in oven set on 400' for 4 minutes

Remove from oven and carefully wrap par-cooked bacon around the outside rim of each muffin insert
If desired, put bacon chunks/bits in the bottom of the insert also
Carefully crack one egg in each insert in the middle of the bacon
Top with fresh cut onion, parsley, or or chives

Place back in oven, cook for aprox 15-20 minutes or until liking

The most delicious breakfast finger food has officially been served!

These are amazing! You captured the colours of the bacon, and the eggs, and parsley perfectly! Yum...I can swell them fresh out of the oven right now!
