Savory Pulled Pork

oil (I used avocado)- heated in pan
8 whole cloves of garlic
1/5 medium sized leek
1 1/2 onions
10 basil leaves
2 sticks of thyme
1 stick of rosemary
3 sage leaves
1/2 stock of parsley
1/4 cup of salt
1 small chili pepper
fresh lemon zest
1/2 cup of cream (or milk depending on preference)
pork roast
20 large tomatoes (with extra lemon) OR 1 tin of tomato sauce with whole tomatoes
water - enough to cover roast

Slow cook on low on burner in large pot for 6-7hours.
Service on herb or garlic bread topped with cheese.

I did some home style cooking this weekend. It helped relieved a lot of stress, and relax. Special thanks to my Photoblog community :) I'm doing Critical Incident Debriefing due to the extreme violent events at work as of late. I told the CI professional about my PB and lack of availability due to work and life, apparently he's also a member!! Haha. I couldn't help but laugh.

Basil, parsley, tomatoes….

The wine I added is optional. I chose to add the Valley of the Giants wine from Australia…. it was delicious, and a bit tart, which I liked with the vegetables. Originally I was going to add the Beaujolais, however once I tasted both, the Valley of the Giants won.

Super tender, just fell a part.
