the tiniest skillet blueberry pie.. [it's a 6 inch skillet] my first attempt at a homemade pie with fresh blueberries.. i used whole wheat flour for the first time ever and i was happy with how it turned out.. [i also made a regular white flour crust pie for the fella]
i'm not sure about the recipe as i was kind of winging it.. for the filling that is, just making it up as i went along..
for the crust, i always use Cook's Illustrated recipe.. it is so consistent and flaky and buttery.. i will have to tweak it for the whole wheat version, as it turned out a little dry.. i have never, ever baked with whole wheat flour in my life, but since i'm trying to live healthy with diabetes, i am making the effort.. i know, pie filling is sugary, but i am trying to use more whole fruits & less sugar, smaller portions for sweets.. i don't want to give up desserts all together..
Russell will probably laugh at me, but baking intimidates me.. it's only been the last couple years i've attempted pie crust and bread and i've never made a scratch cake or hell, cheesecake scares the hell outta me.. if only my mum had've shown me a thing or two.. she was such a fantastic baker..
blueberry has always been my favourite fruit pie..
