the tiniest skillet blueberry pie.. [it's a 6 inch skillet] my first attempt at a homemade pie with fresh blueberries.. i used whole wheat flour for the first time ever and i was happy with how it turned out.. [i also made a regular white flour crust pie for the fella]

i'm not sure about the recipe as i was kind of winging it.. for the filling that is, just making it up as i went along..

for the crust, i always use Cook's Illustrated recipe.. it is so consistent and flaky and buttery.. i will have to tweak it for the whole wheat version, as it turned out a little dry.. i have never, ever baked with whole wheat flour in my life, but since i'm trying to live healthy with diabetes, i am making the effort.. i know, pie filling is sugary, but i am trying to use more whole fruits & less sugar, smaller portions for sweets.. i don't want to give up desserts all together..

Russell will probably laugh at me, but baking intimidates me.. it's only been the last couple years i've attempted pie crust and bread and i've never made a scratch cake or hell, cheesecake scares the hell outta me.. if only my mum had've shown me a thing or two.. she was such a fantastic baker..

Looks amazing! And how cool that it's tiny! smile
I'm not sure how maple syrup plays into everything with blood sugar, so this may not help, but I sub maple syrup for sugar in almost everything I make now (except cookies). For something like filling it should work fine. Agave nectar is good too, and it's supposed to be low glycemic index.

you've just taught me something.. the GI on agave nectar is very low.. i'm picking some up today! thanks..

and i do LOVE maple syrup [i'm Canadian, after all.. hehe] and i make my own from the trees in my yard.. i love the smell and taste of maple syrup.. i like in my coffee or tea.. 

also, local honey is a go to in my house, in place of sugar.. 

okay, i gotta stop, i'm getting hungry.. hehe..

Wow, that is so cool you make your own! smile I still have a little bit left from when we visited Canada. Love that stuff! Agave works fine as a sweetener, but I like the flavor of maple much better.

thanks.. i saw the pie prompt, so actually saved my pie making till last night.. so i could do a photo this morning.. i'm trying to stay 'current' with the prompts..

Oh here's my first impression. The pictured opened up in my email and I looked at it and drooled, seriously drooled! So I had to hop over here to see what kind of pie it was and man you have nailed it. The photo makes it stand out soooo much. Second impression and third impression will say the same thing It's a fantastic looking pie and no doubt delicious. I like the fact that you were able to make it in a small pan. That has always been my contention " why to I have to make a 12 inch pie when I only want a slice for taste?" This is the perfect size! Well done!!! ❤

thank you Camellia.. my fella was confident his pie would be good that he didn't even try it last night, just wrapped the whole pie up and took it to work with him.. 
and i try to go small cuz i hate throwing food away.. of course the chickens always get some leftovers.. smile..
