These babies are super moist!! The recipe is “no fat” but depends on the egg substitute you use. I used the flax egg substitute (1 TBSP ground flax - 2 1/2 TBSP water), so there is a trace of fat in mine (but, that also added a bit of fiber all the good stuff flax has to offer).
2 very ripe bananas
1/3 cup unsweetened applesauce (I always have the lunch snack packs available, just for recipes)
2/3 cups sugar
2 egg substitutes
1/4 cup soymilk (or water)
1 2/3 cup flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
cinnamon to taste
Oven to 350 - spray loaf pan (I used a muffin pan)
Mix wet ingredients, incorporate well. Mix dry ingredients, and fold into wet mixture, just until moist. DO NOT OVER MIX.
Bake 30-40 minutes, or until center is moist, but you can tell it's done. For muffins, bake 25 minutes.

You can see the banana chunks! So so moist.

This is a banana bread recipe, but I only had 1 banana, so I did half a batch, and made 6 muffins.

MMMM, yet another delish recipe. That's a great idea to buy the little lunch packs of applesauce. I buy the big jars, but always end up throwing some away cause I don't use it as much as I'd like. :P
