Vegan Easy Spice Cake with Caramel Frosting

This is SO good, and super easy.

For the cake:
1 1/4 cups flour
1 cup packed brown sugar
1/4 cup cornstarch
1 tsp baking soda
1 tsp allspice
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp salt
1/3 cup oil
1 TBSP vinegar
1 cup water

Oven to 350
In bowl, mix dry ingredients (flour thru salt). Add the oil, vinegar & water. Whisk until thoroughly blended. Pour into a lightly oiled 8-9 in square baking dish. Bake for 30 minutes or until an inserted toothpick comes out clean. Set aside to cool before frosting.

For the Caramel Frosting:
1/4 cup soy margarine
1/2 cup packed brown sugar
2 TBSP soymilk
3/4 cup powdered sugar

In saucepan, melt margarine, then add the brown sugar. Cook over low heat for 2-3 minutes, stirring constatnly. Add the soymilk and bring to a boil Remove from heat and allow to cool. Slowing beat in the powdered sugar until smooth. Frost the cooled cake and enjoy.

I think grated apple or carrots, even zucchini would be great in this (just think of the veggies you could smuggle in there)!!
