Farfalle with Mushrooms and Spinach

Farfalle with mushroom and spinach is fast, filling and super delicious!!

6 oz. farfalle (bow-tie pasta)
olive oil
1 medium onion, chopped
1 cup sliced portobello, cremini, or other fresh mushrooms
2 cloves garlic, minced
4 cups fresh spinach, chopped
1 tsp fresh thyme leaves, chopped
salt & pepper
2 TBSP shredded Parmesan (I used 3 Italian blend soy cheese)
(optional: I added asparagus tips and sundried tomatoes in oil)

1. Cook pasta according to package directions. Drain.

2. In a large skillet, heat oil over medium heat. Add onion, mushrooms and garlic and cook, stirring occasionally, until tender, 2-3 minutes (also add optional items). Stir in spinach, thyme and pepper and cook until spinach is slightly wilted, about 1 minute.

3. Toss mushroom and spinach mixture with pasta, drizzle with a little olive oil and sprinkle with cheese. May add salt & pepper to taste.

Why We Love Mushrooms
If you're trying to cut back on using meat in recipes, mushrooms make a fantastic substitute. Slip ‘shrooms into a lasagna instead of ground beef, stir them into soup in lieu of chicken, even make faux burgers. (A roasted Portobello on a bun? So good!) The classic white button variety is fine, but you’re really missing out if you don't try some of the more glam varieties like enoki, maitake, oyster, cremini and shiitake, all of which are easy to find in big grocery stores. Mustrooms are loaded with disease-fighting antioxidants, including ergothioneine; shiitakes contain a compound that may help lower cholesterol, and that's good for your heart!

Looks "Killer", one of my best lasagna's was with portabello's and eggplant, sorry no vegan cheese, but then I'm from another world. cd
