Vegan Brownie Muffins

OK, I will probably never make a cupcake the regular way again!!! Seriously, these muffins taste like the kind you find at Costco, or a coffee stand. And there's no fat!!!!!!! No egg, or oil. Believe it or not, all there is to these delicious little chocolate muffins is a Duncan Hines Cake Mix and a can of Pumpkin. So you're getting fiber and all the good stuff that pumpkin has to offer.

Combine a 15 ounce can of pure pumpkin with a box of devil's food cake mix (Duncan Hines has no milk in the mix). Stir until blended. Pour the batter into a 12-cup muffin pan sprayed with nonstick spray, and bake at 400 F for 20 minutes. These chocolate muffins taste just like a brownie - but have a fraction of the fat and calories!!

When mixed, the batter resembles that of brownies, not a cake. Tastes just like a brownie mix, as well!

Yep, just 2 simple ingredients!!

The batter is really stiff.

Right out of the oven (yes, you've noticed that my Pampered Chef muffin pan broke in two, but it works great. I can do a tiny 6 muffin batch, and it's not so heavy).

Very moist. Very good. Try it!! I was thinking that a spice cake mix would work, just throw in some nuts, maybe some shredded apple or carrots? I'll have to get right on that :-)
