Jicama Mango Salad

I was watching the Food Network today, and Tyler Perry was making this wonderful looking salad. I love jicama, and everything else in this salad, so I had to run out and get the ingredients to whip this up. I must say, it is quite delicious. So many flavors hit your mouth at once……sweet, sour, salty, spicy, cooling cucumber, and cilantro. All in one bite. He said to add dried chili peppers, but I love to use chili powder on my sweet potatoe fries, so I added the powder, and then tossed in a few dried chili flakes. The chili powder gave it it's amber color, and it's not hot/spicy, just flavorful.
This is such a great salad, because it's very low cal, you could eat a ton of it, and it's very crunchy, fills you up. Try it!!
1 medium jicama (about 1 pound)
2 small cucumbers
3 medium mangoes
1/4 cup roughly chopped cilantro leaves, plus sprigs, for garnish
2 teaspoons powdered dried chile - any medium heat kind is fine
2 limes, juiced
Peel and cut the jicama into long thin strips. Slice the cucumbers in half, scoop out the seeds and then cut into strips similar in size to the jicama strips. Peel the mangoes, cut the cheeks off, then slice into wedges. Combine all the ingredients in a large mixing bowl with the chopped cilantro, powdered chile and lime juice. When ready to serve, season with a little salt and garnish with fresh cilantro sprigs.
